Choo’s Food Corner: Choo’s Homemade Spaghetti Sauce

 

I have been making the same Spaghetti Sauce for a good 25 years now and to be honest everyone loves it. My friends text me asking when the next time I am making it or when I am texting with them we always talk about getting together and I pretty much always make my Spaghetti Sauce for them.

Ingredients

3% Ground Beef – I buy 3 LBs
3 LBs Italian Sausage
2 tbsp Fresh Garlic in The Jar
2 Orange & 2 Yellow Peppers Large, Chopped
3 lbs Fresh Sliced Mushrooms
2 Cans Black Olives, Chopped
2 Stalks Celery (You can do just one but we love celery) Chopped
2 Bunches Green Onions, Chopped
1 White Onion, Large, Chopped
8 Medium Tomatoes on The Vine, Chopped
2 Cans Hunts 4 Cheese Sauce
2 Large Cans Hunts Tomato Sauce
2 Cans Garlic Stewed Tomatoes
3 or 4 Can Hunts Tomato Paste – You will use depending on the thickness you want your sauce
1 lb Fresh Grated Parmesan Cheese
3 tbsp Italian Seasoning
Salt & Pepper

Instructions

In your crock pot add 4 Cheese, Tomato Sauce, 2 Cans Tomato Paste, and Stewed Tomatoes, stir, add 1 tbsp garlic in juices, 2 tbsp italian seasoning, dash salt dash of pepper. Stir and cover while you cook the meats and vegy’s.

Make sure you chop up all your ingredients and place in separate bowls as we will add them one by one for a certain amount of time before we add the next one.

Add Your hamburger and sausage, cook on medium with the lid on. Do not add any spices or salt and pepper yet. It will cook quite sometime and build up a lot of juices, let it continue cooking with the lid on until it starts to break up and become small chunks.

When it is fully cooked, drain your juices into a pan and set aside. Return hamburger and sausage to your pan. Add 2 tbsp of garlic with juices, add your celery and cover and cook for 10 minutes.

Add your onions, peppers and cover and cook another 10 minutes.

Add your tomatoes and cover and cook another 20 minutes or half hour.

Add your mushrooms and cover and continue cooking about 12 to 15 minutes.

Make sure you are stirring ever so often…

Add your chopped black olives and stir and cover and continue cooking 10 minutes.

Drain sausage, hamburger and vegy’s into container and set juices aside. Sometimes you will have a lot of juices and sometimes you wont. I have no answer as to why that happens LOL it just does.

Spoon your hamburger, sausage and vegy’s into your crock pot with sauce, stir. You can add as much as you want here. It depends on how you like your sauce. Sometimes I like it really saucy and sometimes I like it with a lot of the hamburger mixture. When I want it saucy I just take the hamburger mixture left over and freeze for another pasta dish with my white sauce.

You be the judge here and make it how you like it.

Now your first hamburger and sausage juice add about 4 or 5 tbsp to your sauce. Dump the rest unless you want it for soup stock.

Add a ¼ cup of the hamburger vegy juice to your sauce. You should use the rest for a soup, its delicious or toss it.

Let it cook all day long. You can taste it and see if it needs anymore italian seasoning or salt or pepper. I do not use over kill of spices because I like to taste my food.

Notes

When it is done, it is ready to eat. I serve over homemade noodles which I will be adding a video recipe for with Garlic Bread and fresh parm. This sauce freezes very well. It is always the best the next day. I make a large crock pot of it and it gets eaten here within 3 days. Serve it with a great white wine.
